Jugo de Avena con Limón (Oatmeal, Evaporated Milk and Lime Drink)

A creamy and refreshing oat drink made with rolled oats, evaporated milk, lime juice, vanilla, and simple syrup. It is smooth, lightly sweet, and perfect served cold.

Ingredients
  

  • 1/3 cup rolled oats
  • 2 cups cold water divided
  • 1 cup evaporated milk
  • 5 tablespoons simple syrup
  • 3 1/2 tablespoons fresh lime juice
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • ice, for serving, optional

Instructions
 

  • Combine the oats and 1 cup of water in a bowl and let them soak for 20 minutes.
  • Add the soaked oats, including the soaking water, to a blender with the remaining 1 cup water, simple syrup, and a pinch of salt. Blend for 45 to 60 seconds, until completely smooth.
  • For a smoother drink, strain through a fine mesh sieve or nut milk bag. If you prefer more fiber and a slightly thicker texture, you can skip this step.
  • Stir in the evaporated milk and vanilla extract.
  • Add the fresh lime juice last and stir gently to combine.
  • Serve chilled. If desired, pour over ice before serving.

Notes

1. This drink is best served cold and fresh. The oats may thicken slightly as they sit, so just give them a good stir before serving.
2. Straining is optional. It will give you a smoother drink, but leaving it unstrained keeps more fiber and a slightly thicker texture.
3. Fresh lime juice works best and gives the drink its bright, refreshing flavor.
4. If your limes are especially tart, you can adjust the sweetness slightly to keep the flavor balanced.
5. The drink will naturally settle as it sits, so just stir or shake before serving.
6. The texture and flavor get even better after it chills for a bit.
