Morir Soñando de Limón is a creamy Dominican lime drink made with evaporated milk, fresh lime juice, vanilla, and simple syrup. It has the same creamy feel as the classic, with lime instead of orange.
Make sure the evaporated milk, lime juice, and water are all very cold before you begin. I like to chill them in the refrigerator for at least 2 to 4 hours, or overnight if planning ahead.
In a pitcher, stir together the fresh lime juice, cold water, simple syrup, and a pinch of salt.
Taste the lime mixture and add more simple syrup a little at a time until it reaches your preferred sweetness.
Add the ice to the pitcher or divide it between serving glasses.
Slowly pour in the cold evaporated milk while stirring constantly until the drink looks smooth and creamy.
Taste again and add a little more simple syrup if needed.
Serve immediately while very cold.
Notes
You may not need the full 1/2 cup of simple syrup. Start with 1/2 of it and add more to taste.
Keep all of the ingredients very cold for the smoothest texture.
This drink is best served right after it is made.
If the drink tastes too sweet, add 1 teaspoon of fresh lime juice or 1 tablespoon of cold water at a time until balanced.
